Meatless Mondays | Healthy Walnut Meat!

Hello everybody!

It has  been way too long, but I am going to make an effort to get back in the blogging game.

Tomorrow is Monday (boo) so I thought I could share with you a DELICIOUS new recipe that I am obsessed with, which you can try tomorrow for meatless monday!

My dad and I had a nice trip together to California last month & we went to a cute little restaurant in Long Beach called Steamed. This is where I discovered that you can use walnuts to make a fab meat substitute. When I came back home, I decided to try and recreate the walnut-taco-meat-salad concoction I ate at Steamed, and boy was I impressed. I’m thrilled by this because Zach and I used to always buy Morningstar’s soy meat crumbles until we found out Morningstar does some bad things (think Monsanto). Anyway… here is the very easy and nourishing recipe!
